Key Responsibilities

As a Chef de Partie, you will:

  • Prepare and cook food according to standard recipes, procedures, and plating guides
  • Ensure food is prepared efficiently, economically, and hygienically
  • Assist the Sous Chef in daily kitchen operations
  • Support training and development of kitchen team members
  • Plan, prepare, and deliver high-quality food and beverage products
  • Maintain high standards of cleanliness, hygiene, and food safety
  • Adhere strictly to HACCP and FSMS standards
  • Use kitchen equipment, tools, and machinery correctly and safely
  • Participate in off-site catering or events when required
  • Assist with inventory control and stock-taking
  • Prepare menus and contribute to product development
  • Monitor food quality, portion control, and ingredient usage
  • Ensure timely and accurate food preparation across all sections
  • Work closely with the Stewarding team to maintain cleanliness and reduce breakages
  • Respond professionally and effectively to guest requests
  • Maintain a positive, professional attitude at all times
  • Promote teamwork and departmental goals
  • Carry out additional duties as assigned by management

Required Qualifications & Skills

Hilton is seeking candidates who offer:

  • High school qualification (required)
  • Minimum 3 years’ experience in a 5-star hotel or high-standard restaurant
  • At least 1 year experience as Demi Chef de Partie or equivalent
  • Technical education in hospitality or culinary arts (preferred)
  • Valid health certificate
  • Strong knowledge of Western or Chinese cuisine (role dependent)
  • Proficiency in relevant cooking techniques (grilling, baking, steaming, pastry, etc.)
  • Knowledge of seafood and meat processing
  • Understanding of food storage, receiving, and safety standards
  • HACCP knowledge and compliance
  • Ability to work under pressure in a hot, fast-paced environment
  • Strong time management and organisational skills
  • Leadership and team training abilities
  • Good verbal and written English skills (preferred)
  • Experience with international hotel chains (preferred)
